Ok I got my line-in plugged into my PC. I've been able to record using the sound recorder, but I can't hear myself playing. I tried using Adobe Audition, but there is a lag between the input and output. So I can hear myself playing ,but I can't get the timing right because of the lag. Does anyone know any good program or way to hear yourself play while recording to the pc as well?
And also, I have a dynamic mic for my computer, but the line-in sounds much better.

In your situation you might want to use a simple headphone-jack splitter; run one output into your computer and another to a pair of headphones. That way you'll be listening to the iPhone itself (so no lag) and the computer can record merrily away in the background. There will be no latencies introduced that way and you should be good to go.
As far as low latency recording apps, without getting into too many details, you're bounded somewhat by the speed/memory/ability of your soundcard to process chunks of audio data unless your app or soundcard has a throughput mode where incoming audio can be routed directly to the output. On a standard consumer-type card, I don't think this is too common (someone out there might have a better idea).
For free audio software, try Audacity: http://audacity.sourceforge.net/ it's open source and quite good at audio editing.
